The cook normally works alone, supported by one or more helpers. The cook is in charge of the daily business and progress in the kitchen. The cook is responsible for the preparation of dishes. The cook provides input regarding the composition and modification of menus, menu layout and methods. Leads 2 to 5 employees.

Daily tasks include:

The cook supervises and prepares meals by:

Performing mise en place;
Assessing the quality of the products;
Executing the preparations, checking the quality, tenderness, flavour, colour, fluidity etc;
Performing à la minute cooking, portioning and garnishing;
Supervising the work of the assistant(s), giving directions and instructions;
Supervising the compliance with the regulations concerning safety, working conditions, HACCP and working and presentation methods (house style).

The cook is responsible for ensuring that the stock and daily call-off products are available by:

Planning the daily activities and ordering products and other stock replenishments from mainly regular suppliers at regular conditions;
Receiving, checking and storing ordered products and other items;
Monitoring shelf life and hygiene.

The cook is responsible for quality improvement and optimisation by:

Checking and justifying the quantities of raw materials and (semi) finished products used;
Providing input for the menus, work instructions, etc;
Developing/adapting recipes, making calculations etc. and discussing deviating menus for parties;
Developing SOPs etc.

The cook is responsible for tidying up and cleaning up by:

Cleaning the working environment, kitchen equipment and noticing peculiarities/faults;
Independently resolving minor malfunctions;
Disposing of waste.

Job Requirements:

MBO level 3
Knowledge of products/ingredients and (the composition of) the menu
Demonstrable knowledge of all cooking techniques
Communicative skills in Dutch and English. Spanish and/or Papiamento is an advantage.

A little history about us

Understandably, many think that the name Blue Bay was chosen because of the striking blue water in the bay. The truth is that this beautiful part of Curaçao was already named ‘Blaauwbaai’ (Blue Bay in Dutch), after Anno Blaauw, the owner at the time. He grew limes, oranges and – to make the name even more appropriate – the blue pigment indigo.

Over the years, the plantation has had its share of different owners. In 1800, it was occupied and plundered by French pirates. In the 20th century, it became the property of the Jacobs family, who used it as a farm. During the Second World War, American soldiers manned cannons at Blue Bay to shoot at German submarines.

The master plan of Blue Bay Resort dates back to 1990, when a local development group purchased the plantation from the Jacobs family and built the first infrastructure. In 1997, developer Steve Raspoort saw the area’s enormous potential. Step by step, he established a thriving resort and golf course. Steve Raspoort passed away in 2007, but his family continued realizing his dream to create a welcoming place where life is enjoyed to the fullest. Blue Bay has since grown to become a household name on Curaçao and in the Caribbean.
